Amanda Panda Has Officially Arrived in Ecuador...Bodhi's Here We Come!

Amanda Panda Has Arrived For Her First Visit to Ecuador, South America!!! She even brought us some OMGosh  awesome items to help make meal time more fun over the next 2ish months before we return to the United States.

For the last few weeks we have been trying to think of fun things to do with Amanda during her visit. One of the top events we wanted to do was Bodhi's Thai Lunch. This was and remains one of the best things we have done since arriving in Cuenca. The food, the view, and Bohdi's Family are wonderful. So last week, Heather e-mailed Bodhi to see if the Thai Lunch was an option for this week. We were so thrilled, it was available.

Well today was the day...it was an amazing day from start to finish. We started the day with selling one of our bigger ticket items for the move. We sold our freeze that was less than a month old for $300. Then our friend Roman picked us up and drove us to Bodhi's for his AMAZINGLY YUMMY Thai food. We arrived a little early (30 Minutes) and enjoyed some white wine, red wine, and Coca Cola drinks before everyone else arrived. I was able to spend a few moments talking cooking with Bodhi. I also brought one of my knifes for Bodhi to try out. He had never used a Japanese Nakiri before and he said he loved it. I even left it with him so he could use it to prepare all the salads.

It had been almost a year since our last visit and we regret that we did not make it there more often. The entire meal was delicious!

In our first review of Bodhi's Thai we really only had one negative thing to say about the experience. And I am really glad to say that Bodhi improved that issue! Bravo on the bigger glasses Bodhi! We were very impressed not only with the generous sizes of the portions, but he read our previous review and he acted to correct the only issue we had found. It is so impressive that he listened. So many restaurants and chefs refuse to grow and learn. Bodhi listens and continues to seek improvement. Very impressive!

This time we all decided to have extra satay chicken and the Pad Thai. Good decisions, we enjoyed everything immensely! The salad was delicious, as well. There is no negatives for eating here. Not one! Well, maybe one, We wish we could pack up Bodhi and drag him all over to wherever we live so we can always have his delish food!



Even Amanda Panda who flew in from Florida, USA is in love with Bodhi's food! We believe this is the best restaurant in Cuenca, Ecuador. Our rating stands...5 shamrocks!


After our outstanding day we asked Roman to show Amanda Panda Cumbe, Ecuador.  He headed toward town and we stopping at his families Tia.  Then he drove us all up to an overlook above town to get a beautiful panoramic view.  At the overlook, we also met a sweet Andean Family and they let us into a quaint Catholic Church up on the mountain.

Guys Road Trip to See the Yunguilla Valley, Ecuador






A few weeks ago, my landlords called and asked if I would like to take a look at a house they own in another part of Ecuador.  I readily accepted and off we drove to Yunguilla Valley, Ecuador.  After the trip to Vilcabamba, Ecuador I expected it to be twisty winding roads the entire way. I was pleasantly surprised that the drive was very nice with only the occasional serious twist in the road.  After about 40 minutes we arrived.






We made a few fast stops on the way to the house.  The first was at a little tia where Carlos shot in and out of the vehicle so rapidly that I didn't even see what he bought.  Our second stop however made it clear.  He had bought bread.  Our second stop was a local cheese maker.  The barrels held several different days of milk being changed into cheese. The finished product was just removed from the cheese cloth and was draining. A kilo was less than $3.00 And off to the house we went.












We arrived and I stuck my face into the camera and clicked away for about 10 minutes. The house has been used as a vacation home for the Culcay family but recently they decided they want to consider renting it out. I have no clue how many bedrooms there are at this point. I was far to busy taking photographs. I know they would consider renting the home for $500.00 unfurnished. The appliances and furniture are up for negotiation.


















I would like to be clear, this family cares. I have rented all but a short span of my life and I have NEVER EVER encountered any landlord that cares like they do. If you have an issue it gets addressed. They care about our happiness more than they seem to care about money.
