A
few weeks ago, I posted a teaser on Facebook for my friends and
family. Somehow is didn't survive so I am redoing it.
We
had decided the Sunday would be one of relaxing and taking it easy. So
many days we find ourselves very busy with a ton of tasks. The plan was to just relax, chill, and maybe watch a few movies. We would have to cook dinner,
but that was it.
Heather
went into the cabinet where we keep our potatoes and she made a
shocking discovery.
The
potatoes I had recently bought at the market were rotting already.
Apparently a few spuds were wet and we had not removed or inspected
them when they came home. Into action we all went. Heather and Candy
began to clean the storage and the potatoes while I started doing the
prep work. Within a few hours all the remaining potatoes had been
cleaned, peeled, cut and created into some fabulous dishes.
We
made Pioneer Woman Ree Drummond's Au Gratin Potatoes, Potato soup, baked potatoes and some homemade french fries. Lastly, we made some garlic mashed potatoes. The rest of
the week life was very easy. Most of our meals were already made. All
we had to do was grill up some burgers or chicken, everything else
was done.
We
may have lost the day of relaxing but we all worked so well together, we really were a team...it
was amazing. Little talking, we all just jumped in. It's a lot of work
but it is fun cooking our meals here. We don't pop open a can or open
a box, anymore. There is no fast food to fall back on. Either we cook
or we go hungry. And everything is GMO free and pesticide free. The
cost is very low for the fruits and veggies we eat.
I can go
into Cuenca and buy shrimp at a market for almost nothing. Recently, I
got $20.00 worth of shrimp. It was four kilos (8.8lbs) and over 150 shrimp!
Large ones! Yummy! They great to have with Fettuccine Alfredo or
Scampi. Or just cooked in a pan with garlic and butter. Mmmmm…..
